DOUBLE CHOCOLATE CHIP ZUCCHINI BREAD
Try out this ooey, gooey healthy chocolate treat by following the recipe below!
1/4 cup melted coconut oil
1 tsp. vanilla extract
1/2 cup coconut sugar
1 cup oat flour (100 g. blended rolled oats)
1/2 cup cacao powder
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. sea salt
2 cups shredded zucchini
1/2 cup cacao dark chocolate chips
Preheat oven to 350°F
Combine melted coconut oil, eggs, vanilla extract and coconut sugar in large bowl. Mix well.
Stir in flour, cocoa powder, baking powder, baking soda and sea salt until well combined.
Fold in the shredded zucchini and 1/4 cup chocolate chips.
Pour mix into parchment paper covered loaf pan.
Top with remaining 1/4 chocolate chips.
Bake for 45-50 mins.
